No, seriously: using natural fermentation to proof your dough is a beautiful and delicious way to enjoy baking, but also a slow and sometimes unpredictable process. And so there I am again at 1am on a Tuesday night, shaping my loaves!
Of course you don't need to bake into the night and good strategic timing of when you start your recipe can easily prevent this. But I think most of us get so taken with the process and the craft that we take care of our sourdough the way we would take care of a small child! There is no time off with kids!
In this blog I want to put down (on virtual paper) my thoughts and my findings and document my journey, with the hope that if I am able to organise my thoughts.. and not just organise them, but be able to approach things more critically and reflect on the experiences and on the facts so they become a mass of knowledge that can be 'published' and understood by others - well, that may help me understand them better too!
If you are here just for the recipes, you can easily ignore all my other musings, but I hope you will become an interested as I am in the science, the history and the people behind sourdough baking :)
